OCR: SQUID IN SHRIMP SAUCE Ingredients: 1 lb squid, 2 stalks scallions, 1 slice ginger, 1 red chili. Seasoning Mix A: 1 tbsp cooking wine, 1/2 tbsp corn starch. Seasoning Mix B: 1 tbsp Lee Kum Kee Shrimp Sauce, 1/3 tsp sugar, 1 tsp corn starch, 3 cloves minced garlic. Procedure: 1. Clean squid, discard head and backbone. Cut into slices. Mix with seasoning mix A. Parboil squid in boiling water. Drain and set aside. 2. Cut scallions, ginger and red chili into shreds. 3. Marinate the squid with seasoning mix B. Steam for 4-5 min. 4. Place all ingredients of step 2 on top of the squid. Pour some cooked oil on top. Ready to serve. Serves 4
